Fruit Pie

5-6 each apples
1/4 cup lemon juice
1 cup apple juice
Apple pie spice -- any combination of cinnamon, cloves, nutmeg or allspice
Cornstarch
Butter

3-2-1 pie dough
3 measures flour
2 measures butter
1 measure water or less
Salt if using unsalted butter

Cut the butter into the flour and salt (if needed).
Add the cold water a little at a time until the dough will barely crumble to make a soft dough.
Rollout in use for pie or pastry.
