Mayonnaise and Coleslaw Dressing

Mayonnaise
2 each eggs
2 each egg yolks
1 cup olive oil
1 cup canola or other mild oil
1 teaspoon salt
1 teaspoon dried mustard
1 1/2 teaspoon vinegar or lemon juice


Place the oaks, salt, mustard into the food processor and run for 1 minute.
Slowly began to add to half the amount of oil in a steady stream, very slowly at first until thickened.
Add 1 teaspoon vinegar and continue adding oil.
Finished with 1/2 teaspoon vinegar.
Adjust the seasoning

Coleslaw Dressing
2 cups mayonnaise
1/2 cup vinegar
1/2 cup orange juice
1 teaspoon orange zest
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon celery seed (if you're not using fresh celery and the slaw)
1 cup sugar

Place the sugar, vinegar, orange juice and zest, salt, and pepper in a bowl.
Whisk until the sugar is dissolved.
Add to the mayonnaise, whisk until smooth.
