Penne a la' Vodka

Ingredients
1. 1 tbsp. butter
2. 1 tbsp. olive oil
3. 1 small onion chopped
4. 1 28 oz. can Italian tomatoes drained, seeded and chopped
5. 1 cup whipping cream
6. 1/4 to 1/2 cup vodka
7. 1/4 tsp. dried crushed red pepper
8. 1 lb. penne (or any other) pasta
9. freshly grated Parmesan cheese

1. Melt butter with oil in large heavy sauce
pan over medium heat. Add onion and Sauté until translucent (about
8 minutes). Add tomatoes, and cook until almost no liquid remains in the
pan(for about 25 minutes) stirring frequently.
2. Add whipping cream, vodka, and crushed red pepper and boil until it thickens
to soft consistency (about 2 minutes) and season to taste with salt, pepper
an d/or other spices.
3. Cook pasta in a large pot until tender but still firm (al dente)
and drain well. Transfer to large bowl. Bring the sauce to a simmer, and pour
over the pasta and toss. Sprinkle with grated Parmesan cheese.
