3 whole pieces pita bread or 6 mini pitas
1 tomato, diced
1 cucumber, diced
1/3 plain, lowfat yogurt
1/2 cup diced lowfat Monterey jack cheese
|
Cut the pita breads in half. Separate the sides
with your fingers and you have a pita pocket ready to fill with any number
of ingredients. Dice the tomato and cucumber`. Place the diced tomato and
cucumber and a mixing bowl and add 1/3 cup plain yogurt and stir. Place the
tomato and cucumber mix in the pita pocket and top with Monterey jack cheese.
